An Aspie’s Gotta Eat

Am working on a longer post for tomorrow, but I had some easy sandwiches recently that I thought were worth sharing for those of you who want inspiration for no-cook/easy-to-cook meals.

1. Grilled Cheese – Except I used mayo instead of butter.  I read about this on Chow and it sounded so weird that I had to try it!  We have Vegenaise, which is dairy/egg/gluten-free, and it worked fine.

  • spread a little on both sides each of two slices of bread (don’t use too thick a layer or the inside will get soggy)
  • slice enough thin slices of cheddar to cover slightly less than one slice of bread or use the Kraft slices of cheese
  • place both slices of bread on a skillet, cover one with cheese, and turn heat to medium
  • after a couple minutes, pick up the bread without cheese and place the warm side on top of the cheese; flip the whole thing over
  • wait a few minutes, flip again if it is not browned to your liking.  Don’t leave unattended!!

What I like about this version is that it has a tanginess to it, plus the mayo is less work and cleanup than butter.

2. Ham & Fig Spread – I wholeheartedly vouch for the idea of keeping one or two fruit spreads in your fridge for emergencies.  They’re not just for toast!  I have fig, raspberry, and apricot and use them for baking cookies and jazzing up sandwiches.  So I was looking around the kitchen and thought, well I could have a ham and spinach sandwich which would be completely boring, or I could have ham and fig spread which would be unpredictable.

It was amazing.  And simple.  Just treat the fig spread like mayo or mustard, and add ham.  Cheese optional.  Fig spread (also works with apricot spread or jam!) is sweet and slightly complex.

Just some ideas from someone who hates sandwiches but needs to eat them once in a while!

    Once upon I was bored so I made myself a peanut butter and salsa sandwhich, it was pretty good, just make sure to use butter or mayo on the bread or it’ll get soggy.

    That sounds like a yummy savory combination! And between the peanuts and tomatoes it should have some nutrients…
